Courmayeur, a little city located just under the highest peaks of Europe, is known in the world for the winter sports and for the summer walks in the magnificent nature; in the last years, the city and the region of Val d’Aosta is becoming also a gastronomy destination for all the foodies.
Here, inside the Grand Hotel Royal & Golf, an historical institution of the region you find the restaurant Petit Royal, the little diamond of the hotel. A cuisine based on the best of products that the region can give, diary products, game meet, vegetables, etc…ingredients that the young chef Paolo Griffa went to discover and search over the years. Starting from what the region has to offer and what are the traditional flavors, the chef has build his own style mixing together a revisited classic and innovative combination all kept together by a line.. taste and beautiful artistic plating.

While you’ll find a classical cheese chariot with all the speciality of the region or a classic combination between game meat (deer), polenta, cabbage and a meat jus with blueberries; you’ll also find a chawanmushi of pine, Jerusalem artichoke, blueberries and a mushrooms broth smoked with ant incense.
A kitchen style that showcases the ability, sensibility and technique of the chef and his team. The creations of the chef are brought into a pure clean design dining room, where the feelings of the mountains are given by the old wood, the wooden floors and the mountains pictures on the walls.
