Only the road towards it, with its beautiful nature, the dolomites, is so amazing that you do not need more than what you see around you, feel, breathe and taste.

St. Hubertus

After his hotel school, Norbert traveled around the world to eventually lead the kitchen of Rosalpina back in his native region. Hotel Rosa Alpina in San Cassiano, at the base of the Dolomite mountains. At that time the restaurant was a pizzeria, but Norbert set about turning it into a fine dining establishment, using the cuisines of Austria and Italy as inspiration. He eventually decided to dedicate a small part of the restaurant to the local mountain range, refused to use ingredients produced outside of the Dolomites and named the restaurant St. Hubertus.

His vision was made.
A bold move at the time.
Most customers still expected luxury and classic products.
But Norbert knew what he wanted.
Nature and especially the own products from the environment had to be given priority.
He started looking for local farmers and suppliers.

Norbert’s cuisine today is so forward-looking and at the same time intertwined with traditions from the rich regional region that it is unique.
Using the great products that he was able to find, today, you’ll find a kitchen style that is territorial and sustainable focused; playing with new and ancient techniques of cooking the line that connect all the dishes is the purity and acidity to clean and push the flavors.
While you can find a perfectly made classic like Tarte Tatin, you’ll also be served no waste and innovative dish as a tendon taco, an eel porchetta or trout – white current – juniper. A cuisine rooted in the territory, impregnated by the season, strong and pure; an expression of identity, of a vision that was innovative and bold when it started but that revealed a new direction in gastronomy world. St. Hubertus is also tradition, while the interior design is warm and reveal all the characters of a sudtirol stube the table are  set up in a minimalistic and clean way to leave the focus on the dishes.
